A light spring dinner!

Tonight I made a really nice light spring dinner.  The salad was mixed greens with some pickled beets, light soft goat cheese and spray balsamic vinegar (5 weight watchers points, if you're interested).  I steamed the green beans were steamed in my veggie steamer, and garnished with some kosher salt and spray butter (1 WW point for the butter).  Finally, the fish is tilapia.  I dipped it in an egg white, and then dregged it through a mix of whole wheat bread crumbs, kosher salt, black pepper and garlic powder.  Then put it on a cookie sheet covered in foil.  Drizzle it with a bit of lemon juice, and spray with a bit of butter spray.  Broil for like 5 minutes.  (4 WW points)

Overall an inexpensive dinner, lots of healthy protein and fiber, and low in calories and fat.

A nice glass of pinot grigio was the perfect companion to this dinner.

Mmmmmm such a great dinner to end the weekend.
